Temperature drift is the trap: an oven running thirty degrees under the setpoint is not getting old, it is a sensor out of tolerance or a convection fan slowing. A spark continuing after the burner should have lit means the igniter or the spark module, not the gas supply. On sealed burners it is often a cap seated a millimetre out.
The sensor drifts with age and the oven obeys a wrong reading: uneven browning, a preheat that never completes, a range that reads correct and cooks wrong. A calibration check confirms it.
